I tried this at a friend's house last weekend and was amazed how fast it went and how good it was. When she gave me the recipe I was even more amazed at how easy this one is. Yummo

We call this one Ichi Ban salad from the brand name of the noodles and it is a family favourite. My version uses plain white vinegar, no pepper and no onions but it is essentially the same thing. One thing I have done with it is use the shredded packages of carrots and cabbage mix from the grocery store instead of doing my own cabbage. It adds some colour to the salad and saves a ton of time if you're in a hurry.
