I found this is a great recipe for a spicy but, light meal. Don't forget the avocado it is a great accompaniment.

Ingredients
  • 1 deep dish pie crust
  • 4 eggs
  • 1 cup half-and-half cream
  • 1 1/8 cups cooked, diced chicken
  • 1 1/2 cups broken corn tortilla chips
  • 2 cups monterey jack cheese
  • 1 cup sharp cheddar cheese
  • 1 cup salsa
  • 1 (5 ounce) can green chilies
  • sour cream

Directions
  1. Heat oven to 350°F.
  2. Combine eggs and half & half.
  3. Stir in remaining ingredients.
  4. Pour into crust.
  5. bake @ 350F 55- 60 minutes.
  6. Serve with sour crean.

How unique with the broken tortilla chips, cool idea!


Pretty tasty; a little bit too much liquid in it and needed red pepper flakes, black pepper& onion for a bit more flavor & zing.
