7-Minute Icing

- 4 egg whites shopping list
- 1 1/2 cup sugar shopping list
- 1/4 cup plus 1 Tbsp cold water shopping list
- 1 tsp cream of tartar shopping list
- 1/8 tsp salt shopping list
- 1 1/2 tsp vanilla shopping list
How to make it
- Mix everything except the vanilla in the top of a large double-boiler; it must have at least an 8 to 10 cup capacity.
- Place over moderate heat.
- Beat with an electric beater at high speed for about five minutes until the mixture stands up in high peaks when the beaters are withdrawn.
- Immediately, to stop the cooking, transfer the mixture to the large bowl of an electric mixer. Add the vanilla and beat at a high speed until the icing is smooth and stiff. Use immediately.
- Stack and frost each layer. Then spread over the sides and top of the cake.

Great recipe and a real classic! And piled atop and between layers of devil's food cake ... well...that just makes me lightheaded with cake desire. Frankly. Great post - thanks!!
