Ingredients
  • 500gr skinless chicken breast for healthier option (better with bone and skin)
  • 1 pc medium size Indian red onion - roughly chopped
  • 1 pc big red chili (best to use small red chilies...quantities to your desire...the spicier the dish the better it would turns out)
  • 1/2 tsp garlic paste
  • 1/2 tsp ginger paste
  • 10 pcs canddlenuts, roasted (kemiri)
  • 1/2 tsp turmeric powder
  • 1 pc lemongrass - crushed
  • 1 pc pandan leave - torn lenghtwise
  • 1 pc tomato - roughly chopped
  • 5 pcs lime leaves
  • 2 pcs lime - for marinating the chicken
  • 1 cup half cream milk (originally the recipe uses coconut milk)
  • 1-2 cup water
  • Cooking oil
  • Salt
  • 1 tbs lemon juice
  • 1 pc onion leaves/ spring onion - slice 2cm
  • About a fist of lemon basil leaves - take only the leaves and wash clean

Directions
  1. Cut the chicken to your liking, wash and marinate with lime juice and salt for 15 minutes. Afterwards, wash the chicken thoroughly and keep aside until it's needed
  2. Grind: red onion, chopped red chili and canddlenuts with a bit of oil. Add to the mixture: ginger and garlic paste and turmeric powder
  3. Heat oil in a wok/ pan, put lime leaves, lemongrass and pandan leaves. Saute for about 1 minute, then add the tomato. Keep stirring until tomato gets soften
  4. Add the grinded red onion mixture, stir for about 3-5 minutes
  5. Add chicken pieces and 1/2 cup of water. Mix well and cover. Let it simmer for about 20 minutes
  6. Add the milk and let it simmer for another 5 minutes
  7. Before putting off the stove, add the 1 tbs lemon juice, lemon basil leaves and chopped onion leaves/ spring onion
  8. Add salt to taste
  9. Serve with steamed white rice
  10. *You may add potato into the dish, yummm...if you would like to add potato, add it on the 15th minutes when the chicken is simmering on the stove

This sounds delightful. I don't know grams and such, but I can figure it out on this one from the rest of the ingredients. Very nice recipe. TY.


Hmm, sounds great - although i do not know what canddlenuts are - can i use cashew instead?
@jenniferbyrdez: no problem with the grams - using the decimal system, one pound is 500 grams - an 'american pound' is 50 grams less. so, there isn't that much difference to really matter - at least not, when weighing meat.:-)


500 grams is about 1 lbs more and less, 454 gram is 1 lbs i agree with kochhexe


Don't have candlenut try with brazil nut, or macadamian taste preety similar
