How to make it

  • Greas muffin tins or use paper liners. In small bowl,mix flour,baking powder,baking soda,salt and ginger. In large bowl, cream butter with honey until light and fluffy. Beat in eggs and milk. Stir dry ingredients into wet mixture until just moistened. Stir in apricots and walnuts. Pour into muffin cups. Bake at 350 for 25 to 30 mins or until golden brown and toothpick inserted in center comes out clean. Cool on wire racks.

    These were good! I think next time, though, I will increase the flour to 2 cups. I think the honey adds enough extra moisture that they need a little extra flour. Mine turned out flat and puddled over the tops of my metal muffin tin; the silicone pan was slightly better. Really good flavor though, and not too sweet - perfect for morning. Posted a picture.
