  • 2 oranges, peeled and cut in quarters
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1 cup semolina (cream of wheat)
  • 1/2 cup oil
  • *I prefer melted butter
  • 2-1/2 cups grated carrot
  • 1 cup mashed banana
  • 3 egg whites
  • 1/2 cup dried cranberries
  • confectioners' sugar

Directions
  1. Line the base of a 20 cm round cake tin with baking paper.
  2. Place oranges in a saucepan and cover with water.
  3. Bring to the boil and simmer for 20 minutes or until oranges are soft. Drain, cool, then cut into chunks removing pips.
  4. Mash with a potato masher until very fine.
  5. Mix flour, baking powder, baking soda, sugar and semolina together in a bowl.
  6. Mix orange, oil, carrot and banana into dry ingredients until combined.
  7. Beat egg whites until stiff.
  8. Fold into cake mixture.
  9. Pour mixture into cake tin.
  10. Sprinkle dried cranberries over.
  11. Bake at 180 degrees C for 1-1/4 to 1-1/2 hours or until cake springs back when lightly touched.
  12. Cool in tin for 10 minutes before turning onto a cooling rack.
  13. When completely cooled, dust with confectioners' sugar.
