Ingredients
  • ½ cup oil
  • 1 Cup sugar
  • 2 eggs, beaten
  • 3 ripe bananas, mashed
  • 2 Cups Flour
  • 1 tsp soda
  • ½ tsp powder
  • ½ salt
  • 3 tbl milk
  • ½ tsp vanilla
  • 1 tsp lemon juice
  • ½ cup nuts, optional

Directions
  1. Beat oil and sugar together. Add eggs and banana pulp and mix well
  2. Add sifted dry ingredients, milk, and vanilla, mix well and stir in nuts if using.
  3. Pour into a prepared loaf pan and bake at 350 until toothpick inserted in center comes out clean
  4. Cool well, wrap and store overnight before cutting (yeah, THAT’LL happen)
