How to make it

  • Bring 6 quarts of lightly salted water to a boil and add the spaghetti. Meanwhile, mince the garlic, crumble the red pepper, and sauté them in the oil until the garlic begins to brown. Turn off the heat (the garlic will continue to brown; you don't want it to overbrown and become bitter).
  • When the spaghetti are done, drain them well, transfer them to a bowl, and stir the sauce into them. Serve with grated Parmigiano or Pecorino Romano on the side; some people like it, including some Romans, whereas others, especially traditionalist Romans, shudder at the idea

    I make this too but I've never tried it with the dried chilies-I bet that would be really good! One day we had out of town friends drop by unexpectedly and of course we invited them to eat with us; I didn't have anything prepared and so I made this and a cesar salad. We ate out on the patio and enjoyed a bottle of wine with dinner. You know it's been almost 20 years and they still mention that dinner once in a while!

    Yes - I make this all the time (even though I am not an Italian) and your version works great (although I scaled it down for 3 persons). A great dish which most people will have the ingredients for close at hand. :)
