Beefy Italian Skillet

- 1 pound boneless beef round steak shopping list
- nonstick cooking spray shopping list
- 2 cups sliced fresh mushrooms shopping list
- 1 cup chopped onion (1 large) shopping list
- 1 cup coarsely chopped green sweet pepper shopping list
- 1/2 cup chopped celery (1 stalk) shopping list
- 2 cloves garlic, minced shopping list
- 1 14-1/2-ounce can tomatoes, undrained and cut up shopping list
- 1/2 teaspoon dried basil, crushed shopping list
- 1/4 teaspoon dried oregano, crushed shopping list
- 1/4 teaspoon crushed red pepper (optional) shopping list
- 8 ounces dried whole wheat or regular spaghetti shopping list
- 2 tablespoons grated parmesan cheese (optional) shopping list
How to make it
- 1. Trim fat from meat. Cut meat into 4 serving-size pieces. Lightly coat an unheated large skillet with cooking spray. Heat over medium heat. Add meat to skillet; cook each piece on both sides until brown. Remove meat from skillet.
- 2. Add mushrooms, onion, sweet pepper, celery, and garlic to the skillet. Cook until vegetables are nearly tender. Stir in undrained tomatoes, basil, oregano, and, if desired, crushed red pepper. Add meat to skillet, spooning vegetable mixture over the meat. Simmer, covered, about 1-1/4 hours or until meat is tender, stirring occasionally. Meanwhile, cook spaghetti according to package directions.
- 3. Transfer meat to a serving platter. Spoon vegetable mixture over meat. Serve with spaghetti. If desired, sprinkle with Parmesan cheese. Makes 4 servings.
