Creamy Chicken Enchiladas

- 1 tablespoon butter shopping list
- 1 medium onion, chopped shopping list
- 1 small can chopped green chilies, drained shopping list
- 1 (8 ounce) package cream cheese, cut up, softened shopping list
- 3-1/2 cups chopped, cooked, lightly seasoned chicken breasts shopping list
- 8 (8-inch) flour tortillas shopping list
- 2 (8-ounce) packages monterey jack cheese, shredded shopping list
- 2 cups whipping cream shopping list
How to make it
- In large skillet over medium heat, melt butter, add chopped onion and saute' for 5 minutes
- Add green chilies, saute 1 minutes
- Stir in cream cheese, chicken, cook, stirring constantly until cream cheese melts
- Spoon 2-3 tablespoons chicken down center of each tortilla
- Roll up tortillas, and place seam side down, in a lightly greased 9 X 13 inch baking dish
- Sprinkle with Monterey Jack cheese
- Drizzle with the 2 cups whipping cream
- Bake at 350 degrees for 45 minutes
