Creamy Chicken Enchiladas Recipe
The creamiest enchiladas ever! Cooked chicken, green chiles, cream cheese, Monterey Jack cheese and 2 cups of whipping cream make them perfect!

Ingredients
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 1 small can chopped green chilies, drained
  • 1 (8 ounce) package cream cheese, cut up, softened
  • 3-1/2 cups chopped, cooked, lightly seasoned chicken breasts
  • 8 (8-inch) flour tortillas
  • 2 (8-ounce) packages Monterey Jack cheese, shredded
  • 2 cups whipping cream

Directions
  1. In large skillet over medium heat, melt butter, add chopped onion and saute' for 5 minutes
  2. Add green chilies, saute 1 minutes
  3. Stir in cream cheese, chicken, cook, stirring constantly until cream cheese melts
  4. Spoon 2-3 tablespoons chicken down center of each tortilla
  5. Roll up tortillas, and place seam side down, in a lightly greased 9 X 13 inch baking dish
  6. Sprinkle with Monterey Jack cheese
  7. Drizzle with the 2 cups whipping cream
  8. Bake at 350 degrees for 45 minutes
