- 16 each new potatoes, cooked, skins left intact shopping list
- ½ cup lobster meat, minced shopping list
- ¼ cup sour cream shopping list
- 1 teaspoon horseradish shopping list
- 2 tablespoons butter, softened shopping list
- ¼ teaspoon salt shopping list
- ¼ teaspoon black pepper shopping list
- 2 tablespoons chives, minced shopping list
- As needed chives, for garnish shopping list
How to make it
- Cool the potatoes well. If necessary to make them stay upright, "shave" a tiny sliver from the bottom. With a grapefruit spoon scoop a well in the top of each about the size of a thimble. Reserve this potato for another use. Mix all other ingredients. Fill each "well" with this mixture. Cut extra chives into approximately 3/4" lengths, and place two in an "x" pattern on each potato for garnish.
