Our twist on an down island classic. Grilled fish married to sweet mango.

Ingredients
  • 8oz grouper fillet
  • 1 shallot
  • 6oz unsalted butter
  • 1 tsp honey
  • salt
  • white pepper
  • 1 ripe mango
  • fresh parsley

Directions
  1. mince shallot and sautee in approx 1oz butter, add remaining butter, honey, salt, and mango. Simmmer on very low heat.
  2. salt and pepper groupe
  3. grill 4 mins on each side in diamond pattern
  4. plate, sauce
  5. serving suggestions; grilled asparagus, fresh fruit salsa, rice and beans
