Traditional Peanut Butter Cookies Gluten-free Recipe

These are the cookies my mom used to make before I went gluten-free (and so did she). They taste just like the originals.

Ingredients
  • 1/2 c shortening (or butter, maybe)
  • 1 c brown sugar
  • 1 egg
  • 3/4 c peanut butter
  • 1/2 t baking soda
  • 1 1/2 c rice flour mix

Directions
  1. Cream shortening and sugar.
  2. Add egg and peanut butter.
  3. In a separate bowl, combine the baking soda and flour mix.
  4. Add in two parts, stirring thoroughly after each addition.
  5. Roll into balls, press a fork into the top of each, place on a Silpat-ed cookie sheet and bake in a preheated oven for 8-10 minutes, at 375.
  6. Let cool 5 minutes before removing from cookie sheet.
