Ingredients
  • 3 cups bread flour
  • 3/4 package of yeast (or 1-1/2 teaspoons of yeast - fast activating)
  • 2-4 minced fresh garlic cloves
  • 3 tablespoons fresh rosemary minced
  • 3 tablespoons olive oil
  • 11/2 cups warm water
  • 1 teaspoon sage
  • 1 teaspoon of fresh cracked pepper
  • 2 or 3 "shakes" of crushed red pepper (optional)
  • 1-1/2 tablespoons honey
  • 3/4 teaspoon salt
  • Sesame and/or poppy seeds for top of bread (optional)

Directions
  1. Mix all dry ingredients and herbs in bowl - mix till thoroughly combined.
  2. Add yeast as necessary for your bread machine. Some machines want the yeast in first, others want it in last.
  3. Put all dry ingredients with herbs and seasonings in order that your bread machine requires.
  4. Add all liquids per your bread machine.
  5. Turn that puppy on and depending upon how long your machine takes, you will have amazing smelling homemade bread in your bread machine in no time flat.
  6. Don't forget this bread is great for brunches and toasted up - it really holds its own when paired with left over meats.
  7. If you wish, you can also let your machine simply make the dough, then set onto a floured surface, let dough rest for 15 minutes.
  8. Then shape into a large baguette or round.
  9. Cover with clean cloth, place in a warm spot (80 degrees F) and let rise until it doubles - anywhere from 20 minutes to 1.5 hours depending upon the room's temperature.
  10. Place bread on cooking sheet that has been sprinkled with corn meal.
  11. Make a criss cross cut with knife if making a round shaped bread or several slashes along the bread if making a baguette shape.
  12. Put egg white wash on top if you wish along with sesame seeds or other type seeds. This will give bread a shiny look - leave egg wash off for a rustic look.
  13. Bake for 30 minutes in a 350 degree oven till when knocked - sounds hollow.

This recipe looks wonderful. I can't say any bread recipes that I have used in my bread machine resemble this one. I love garlic too. I will let you know when I make it. Right now I am behind schedule for my Christmas cookies so I need to do alot of baking over the weekend. Only getting our tree tomorrow as I usually don't put the tree up till a few days before Christmas.
