Ingredients
  • 2 cups cooked, diced chicken
  • 24 ounces frozen veggies, I used corn, carrots and green bean, its what I had
  • 1 large or 2 small potatoes, cooked in microwave frist, 5 minutes for the 2 smalls
  • 1 large onion, diced
  • salt , to taste
  • pepper, to taste
  • 1 teaspoon ground sage
  • -
  • 1/4 cup butter
  • 1/4 cup flour
  • -
  • 4 cups chicken broth
  • -

  • 2 eggs
  • 2 cups flour
  • salt
  • 2 to 3 tablespoons milk or light cream

Directions
  1. Cut up the chicken and set aside.
  2. Melt the butter in a medium sized heavy saucepan.
  3. Add flour, and cook over medium heat for about 5 minutes.
  4. Add chicken broth, raise cooking temp and bring to a boil.
  5. Reduce heat back down and add chicken, veggies, potatoes, onion, pepper and salt.
  6. Mix well and heat through.
  7. Pour into a 9 by 12 inch pan.
  8. -
  9. Combine 2 eggs, flour and milk to make a soft dough.
  10. Roll out as thick or as thin as you want it .
  11. Cut into 1 inch by 2 inch diamonds.
  12. Place these on top of the chicken pot pie filling.
  13. I then sprayed them with oil.
  14. -
  15. Bake at 400 f for 45 minutes to an hour. Until golden brown.
  16. I am going to let this set until tomorrow to eat it. I was just up tonight watching kids so I made it ahead of time.
  17. -As for the veggies peas and carrots, broccoli, corn, mixed veggie if you must. I did the green beans for the color, I would have preferred peas.

Alterations


We did NOT like the top, so I am going to try adding baking powder or baking soda to give it alittle puffiness and see if that works. If not I will find something else. Thats what cooking is all about finding what the family likes and passing that down.
