Bacon Rice and Tomatoes

- 2 packages bacon, cut into 2" pieces shopping list
- 2 cans stewed tomatoes shopping list
- 1/2 cup water shopping list
- 2 Tbsp sugar shopping list
- salt & pepper to taste shopping list
- rice – prepared per package directions – serving for 4 (I use a parboiled rice) shopping list
How to make it
- Fry bacon in pan until it is done the way you like it (crispy or soft).
- Drain bacon grease into bowl or cup – save for later.
- Add tomatoes, water, and sugar.
- Stir well. Add about 1/4 – 1/2 cup of the bacon grease.
- Cook on medium-low heat for about 15 minutes.
- Taste broth, add salt and pepper to your liking.
- Cook for another 5 minutes.
- Serve over rice.
