How to make it

  • Heat oven to 350.
  • Spray 12 muffin cups.
  • Combine flour through sugar.
  • Beat buttermilk into ricotta in separate bowl, add eggs, whisking in one at a time.
  • Beat in lemon juice, vanilla and almond extracts.
  • Pour with butter and cherries into flour, fold in just until moistened.
  • Scoop into muffin cups.
  • Bake until tester is clean, 20-25 mins.
  • Cool on rack.

    These sound really great, I love baking with ricotta, and I have a quick bread recipe almost like this ( without the ricotta) using dried cherries. 3/16? what would that equal, would it be ok if I just used 1 tsp of baking soda?
