A carrot dish with a fresh lime taste. Very easy and simple.

Ingredients
  • 8 x Baby carrots, scrubbed and thinly sliced
  • 1 x Large onion, sliced
  • Lime juice to taste
  • Salt
  • 1 x tbsp Olive oil

Directions
  1. Heat a saucepan at medium heat and add the olive oil
  2. Fry the sliced onions for a minute or two
  3. Add the sliced carrots
  4. Add the lime juice and a bit of salt
  5. Cover and leave for about 3-4 minutes
  6. Take off lid and taste. Adjust if necessary
  7. Fry another minute or two uncovered and place in serving dish
  8. Garnish with fresh parsley

Very simple, and less calories than the regular 'candied' or 'glazed' carrots -- I like this! Thanks for posting it, Heinoos :)


Now this is something else with carrots. Get so tired of the usual stuff. Great recipe.
