How to make it

  • Heat a saucepan at medium heat and add the olive oil
  • Fry the sliced onions for a minute or two
  • Add the sliced carrots
  • Add the lime juice and a bit of salt
  • Cover and leave for about 3-4 minutes
  • Take off lid and taste. Adjust if necessary
  • Fry another minute or two uncovered and place in serving dish
  • Garnish with fresh parsley
