How to make it

  • Cream together the margarine and sugar, using a wooden spoon, until mixture goes light and creamy.
  • Beat in egg. In second bowl, sift flour and baking powder. Grate lemon rind and add to flour.
  • Cut cherries into quarters and mix with flour. Put paper cases ready on your baking tray.
  • Add flour to the creamed mixture in first bowl. Stir well so that all ingredients are thoroughly mixed.
  • Add 2-3 tablespoons of milk to make the mixture just soft enough to drop from spoon.
  • Put a big teaspoonful into each paper case. Bake in a fairly hot oven for 20-25 minutes
