Autumn Pasta With Apples And Cranberries Recipe
AUTUMN PASTA WITH APPLES AND CRANBERRIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stuart Estate in Grand Saline, Texas in 1991.

Ingredients
  • 8 ounces wide egg noodles
  • 2 teaspoons margarine
  • 1/2 pound turkey ham cut into 1/2" cubes
  • 1 bunch green onion whites and some greens chopped
  • 2 granny smith apples cut into slices then into 1/2" pieces
  • 1/4 teaspoon nutmeg
  • 1/2 cup frozen apple juice concentrate thawed
  • 1 cup half and half
  • 1 cup sharp cheddar cheese grated
  • 2 tablespoons chives
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup dried cranberries

Directions
  1. Cook pasta according to package directions then drain well.
  2. Meanwhile melt margarine in large skillet and cook ham.
  3. Remove to a plate when done.
  4. Add onion to skillet then cook over medium high heat for 3 minutes.
  5. Add apples and cook until apples are golden.
  6. Transfer apples and onions to plate.
  7. Add nutmeg, apple juice and half and half to skillet.
  8. Sauce may look curdled but continue to cook for 5 minutes or until reduced by 1/3.
  9. Add cheddar cheese and chives then stir until cheese is melted.
  10. Season with salt, pepper and cranberries.
  11. Add sauce to pasta and toss to coat.
  12. Add ham, apples and onions.
