Banana Fritters Recipe
One of the my family's favorites. Passed down from one mother to another.

Ingredients
  • 1 banana
  • 2 tbsp. lemon juice
  • powdered sugar
  • 1 1/2 cups flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 egg
  • 2/3 cups milk
  • 2 tbsp. powdered sugar

Directions
  1. Mix and sift dry ingredients.
  2. Combine milk and egg well beaten, and add to dry ingredients, while beating constantly.
  3. The batter should be thin enough to entirely coat the banana (or other fruit). If too thick, add more liquid. If thin, add more flour.
  4. Peel banana and cut into halves.
  5. Then cut in two crosswise.
  6. Sprinkle with powdered sugar and lemon juice, and allow to stand 30 minutes.
  7. Drain, dip into the batter and fry in deep, hot fat.
  8. Serves 6-8.

This is great to dip into melted chocolate.


This sounds like a another way to use bananas and maybe a new way to use "horse" bananas. I will try this one. Thanks for posting!
