Turtle Squares

- 1 Tablespoon plus 1 cup butter (no substitutions), softened, divided shopping list
- 1-1/2 cups coarsely chopped pecans, toasted shopping list
- 1 to 1-1/2 cups chocolate chips (or part chocolate, part white) shopping list
- 2 cups packed brown sugar shopping list
- 1 cup light corn syrup shopping list
- 1/4 cup water shopping list
- 1 can (14 oz) sweetened condensed milk shopping list
- 2 teaspoons vanilla extract shopping list
How to make it
- Line a 13 x 9 x 2 inch baking pan with foil. Butter the foil with one tablespoon of butter. Sprinkle with pecans and chips, set aside.
- In a heavy saucepan, over medium heat, melt remaining 1 cup butter. Add brown sugar, corn syrup and water.
- Cook and stir until mixture comes to a boil. Stir in milk.
- Cook, stirring constantly, until a candy thermometer reads 248 (firm ball stage).
- Remove from heat and mix in vanilla.
- Pour into prepared pan, do not scrape saucepan.
- Cool completely.
- Turn out onto a cutting board and peel off the foil. Cut into approximately 1 inch squares. Yields about 2-1/2 pounds. Store in a tightly sealed container in the refrigerator.
