Ingredients

How to make it

  • Soak lentils over night in red wine.
  • Fry cubes belly of pork,
  • onions until onions light brown,
  • sprinkle with confectioner’s sugar,
  • let caramelize.
  • Add lentils with wine and stock
  • Add all spices
  • Simmer for 15 minutes
  • Add cubed carrots and
  • Cubed potatoes
  • Simmer until lentils and vegetables are done.
  • Add cream
  • Now season to taste
  • Instead of confectioner’s sugar at the beginning you can take 4 sugar cubes and use your kitchen ‘soldering gun’ to caramelize the cubes, then put them into soup. I find the way with the confectioner’s sugar easier and it tastes just as good.

    This sounds wonderfully hearty. I can always use another lentil soup recipe and this one sounds particularly unique.

    This does sound interesting. I will have to give it a try. I would not have thought of soaking the lentils in wine. I have also never used pork belly. Not that it is not easy to find in my area I just never had the desire to use it. Thank you for the posting it is a very interesting idea.
