Tipsy lentil soup

- lentils (about 4 cups, depending on how much you need) shopping list
- 1 litre of medium dry red wine shopping list
- ½ pound cubed belly of pork (cured, smoked) shopping list
- 2 onions shopping list
- 1 litre (approx.)vegetable stock shopping list
- bay leaves shopping list
- cloves shopping list
- cayenne pepper shopping list
- salt shopping list
- 2 carrots, cubed shopping list
- 4 small potatoes, cubed shopping list
- 250 ml cream (should be about 2 cups) shopping list
- powdered sugar or sugar cubes (confectioner’s sugar?) shopping list
How to make it
- Soak lentils over night in red wine.
- Fry cubes belly of pork,
- onions until onions light brown,
- sprinkle with confectioner’s sugar,
- let caramelize.
- Add lentils with wine and stock
- Add all spices
- Simmer for 15 minutes
- Add cubed carrots and
- Cubed potatoes
- Simmer until lentils and vegetables are done.
- Add cream
- Now season to taste
- Instead of confectioner’s sugar at the beginning you can take 4 sugar cubes and use your kitchen ‘soldering gun’ to caramelize the cubes, then put them into soup. I find the way with the confectioner’s sugar easier and it tastes just as good.

This sounds wonderfully hearty. I can always use another lentil soup recipe and this one sounds particularly unique.

This does sound interesting. I will have to give it a try. I would not have thought of soaking the lentils in wine. I have also never used pork belly. Not that it is not easy to find in my area I just never had the desire to use it. Thank you for the...more
