Ez Pineapple Muffins

These are really easy and leave the egg and oil out so a little more heart healthy and not so many calories as regular muffins. I calculate them to be about 135 calories.
Ingredients
- 1 pineapple cake mix shopping list
- 2 8 oz cans of crushed pineapple, undrained(I use the kind in its own juice shopping list
How to make it
- Preheat oven to 350
- Put muffin papers in 18 muffin tins and spray with no stick spray
- Put pineapple, undrained in bowl
- Stir in powdered cake mix (just the powdered cake mix, no other ingredients)
- This is pretty idiot-proof but don't overstir. Muffins are better with minimum stirring. Better to even leave a few powder spots. Mostly they will disappear anyway.
- Drop large spoonfuls in each muffin paper
- Bake until toothpick comes out clean, about 18-22 minutes depending on your oven.
- NOTE: I think a white or yellow cake mix would work just fine also and it might be interesting to try a little coconut extract in there as well. Just don't make it harder than it needs to be. Basically just two ingredients--the dry cake mix, 16 oz crushed undrained pineapple and NOTHING ELSE.

Love pineapple- especially the small ones are sooo sweet - will try with a Gluten free mix - I can't copy a recipe :)
