Ez Pineapple Muffins Recipe
These are really easy and leave the egg and oil out so a little more heart healthy and not so many calories as regular muffins. I calculate them to be about 135 calories.

Ingredients
  • 1 pineapple cake mix
  • 2 8 oz cans of crushed pineapple, undrained(I use the kind in its own juice

Directions
  1. Preheat oven to 350
  2. Put muffin papers in 18 muffin tins and spray with no stick spray
  3. Put pineapple, undrained in bowl
  4. Stir in powdered cake mix (just the powdered cake mix, no other ingredients)
  5. This is pretty idiot-proof but don't overstir. Muffins are better with minimum stirring. Better to even leave a few powder spots. Mostly they will disappear anyway.
  6. Drop large spoonfuls in each muffin paper
  7. Bake until toothpick comes out clean, about 18-22 minutes depending on your oven.
  8. NOTE: I think a white or yellow cake mix would work just fine also and it might be interesting to try a little coconut extract in there as well. Just don't make it harder than it needs to be. Basically just two ingredients--the dry cake mix, 16 oz crushed undrained pineapple and NOTHING ELSE.
