Onion Soup With Champagne Recipe
New Year's Day. And what do you do with all of the leftover champagne? SOUP!

Ingredients
  • 2 large onions
  • 1 quart dry champagne
  • 1 garlic clove
  • chopped parsley
  • 20 blanched almonds
  • Sliced French bread
  • Parmesean cheese

Directions
  1. Slice the onions very thin and fry them lightly in butter.
  2. Pour on the onions the champagne.
  3. Add the parsley, almonds and garlic - put the garlic on a toothpick to make it easy to remove later.
  4. Boil for 20 minutes and remove the garlic.
  5. Place a slice of French bread in the bottom of each bowl, and ladle the soup over.
  6. Sprinkle with Parmesean cheese.
