Eggplant Caviar Recipe
Poor man's caviar...Got this recipe from Williams and Sonoma.

Ingredients
  • 2 eggplants
  • 1 clove garlic, passed through garlic press
  • 1 1/2 tsp. fresh lemon juice
  • 1 tybls. extra virgin olive oil
  • 2 pinches cumin
  • salt to taste

Directions
  1. Pre heat oven to 500
  2. Make 2-3 slashes in each eggplant so they don't burst while cooking
  3. Put eggplant on rack in oven and put a baking sheet under them to catch any drippings
  4. Bake until they are black and wrinkled, about 45 minutes
  5. Let them cool
  6. Once cooled, peel eggplant
  7. Mash with a fork
  8. Add remaining ingredients and mix well
  9. Let sit in fridge overnight
  10. Serve room tempurature
  11. I serve with pita chips or veggies

Another good one, Wynne! I make a Russian eggplant caviar, which is a little different, but this one is a great variety.
