Eggplant Caviar

- 2 eggplants shopping list
- 1 clove garlic, passed through garlic press shopping list
- 1 1/2 tsp. fresh lemon juice shopping list
- 1 tybls. extra virgin olive oil shopping list
- 2 pinches cumin shopping list
- salt to taste shopping list
How to make it
- Pre heat oven to 500
- Make 2-3 slashes in each eggplant so they don't burst while cooking
- Put eggplant on rack in oven and put a baking sheet under them to catch any drippings
- Bake until they are black and wrinkled, about 45 minutes
- Let them cool
- Once cooled, peel eggplant
- Mash with a fork
- Add remaining ingredients and mix well
- Let sit in fridge overnight
- Serve room tempurature
- I serve with pita chips or veggies

Another good one, Wynne! I make a Russian eggplant caviar, which is a little different, but this one is a great variety.
