How to make it

  • Pre heat oven to 500
  • Make 2-3 slashes in each eggplant so they don't burst while cooking
  • Put eggplant on rack in oven and put a baking sheet under them to catch any drippings
  • Bake until they are black and wrinkled, about 45 minutes
  • Let them cool
  • Once cooled, peel eggplant
  • Mash with a fork
  • Add remaining ingredients and mix well
  • Let sit in fridge overnight
  • Serve room tempurature
  • I serve with pita chips or veggies
