How to make it

  • Using medium heat, melt the butter in an omelette skillet on the stove burner and light the over broiler.
  • Add the eggs, beaten with the salt and pepper and allow the eggs to cover the bottom of the skillet.
  • As the eggs begin to set arrange the sliced tamale circles all over the surface of the omelette.
  • Sprinkled on the grated Cheddar cheese likewise covering the whole surface of the omelette.
  • When the lower portion of the omelette has set; remove from burner and ease the skillet under the hot broiler for a few minutes to set the eggs on the top and melt the cheese.
  • Remove the omelette from the broiler and gently transfer it to a warm plate; folding the omelette as you do so.
  • Pour the TexMex Chili over the folded omelette and serve immediately with your favorite salsa on the side.

    I thought I'd done every omelet imaginable! What a great idea! Too bad we can't get good South S.A. tamales here. I guess I'll have to sub with the grocery store kind. :( But mmmm mmmm, can't wait!
