Richards Chili  Tamale Omelette Recipe
This is one of my prize recipes, originated because I like to eat cold tamales for breakfast. One morning I decided to put a sliced tamale into an omelette. WOW!

Ingredients
  • 1 tablespoon butter
  • 3 beaten eggs
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 shucked, cold tamale; sliced into 1/4-inch circles
  • 1/4 cup grated cheddar cheese
  • 2/3 cup TexMex chili; heated

Directions
  1. Using medium heat, melt the butter in an omelette skillet on the stove burner and light the over broiler.
  2. Add the eggs, beaten with the salt and pepper and allow the eggs to cover the bottom of the skillet.
  3. As the eggs begin to set arrange the sliced tamale circles all over the surface of the omelette.
  4. Sprinkled on the grated Cheddar cheese likewise covering the whole surface of the omelette.
  5. When the lower portion of the omelette has set; remove from burner and ease the skillet under the hot broiler for a few minutes to set the eggs on the top and melt the cheese.
  6. Remove the omelette from the broiler and gently transfer it to a warm plate; folding the omelette as you do so.
  7. Pour the TexMex Chili over the folded omelette and serve immediately with your favorite salsa on the side.

Who'd a thought?????? I HAVE TO TRY THIS ONE! Neighbors delivered tamales tonight... OMG.. so good.


This sounds sooo good!but have no idea what tamales are nor do i think therez any chance of getting them here in India ;(


I thought I'd done every omelet imaginable! What a great idea! Too bad we can't get good South S.A. tamales here. I guess I'll have to sub with the grocery store kind. :( But mmmm mmmm, can't wait!
