Shrimp And Goat Cheese Pasta Recipe
This is a super fast and super flavorful saute. Can easily be manipulated in to various dishes. Also works well with grilled or sauteed chicken.

Ingredients
  • 1 lb Fettucine or Linguine Noodles
  • 1 Lb Large shrimp peeled and deveined
  • 2 tlbsp butter
  • 2 tlbsp olive oil
  • 1/2 jar marinated artichoke hearts In oil, roughly chopped
  • 1/2 pint cherry/grape tomatoes halved or quatered depending on size
  • 1/2 cup white wine (pinot grigio recommended)
  • 3 cloves garlic chopped well
  • 1/4 cup fresh chopped parsley
  • 4 oz Goat Cheese chopped

Directions
  1. Boil noodles in heavily salted water until al dente.
  2. While noodles boil -
  3. Melt butter and heat oil in skillet until hot.
  4. Add garlic and saute for 1-2 minutes but do not brown
  5. Add shrimp and saute slightly until
  6. Add artichoke hearts and tomato slices and saute for 1-2 minutes
  7. Add wine and simmer 5 minutes
  8. Add parsley and simmer until noodles are done.
  9. Add noodles to pan and toss, adding pasta water as necessary.
  10. Toss in goat cheese and remove from heat.
  11. Add to serving bowl and enjoy!
