Shrimp and Goat Cheese Pasta

- 1 lb Fettucine or linguine noodles shopping list
- 1 Lb large shrimp peeled and deveined shopping list
- 2 tlbsp butter shopping list
- 2 tlbsp olive oil shopping list
- 1/2 jar marinated artichoke hearts In oil, roughly chopped shopping list
- 1/2 pint cherry/grape tomatoes halved or quatered depending on size shopping list
- 1/2 cup white wine (pinot grigio recommended) shopping list
- 3 cloves garlic chopped well shopping list
- 1/4 cup fresh chopped parsley shopping list
- 4 oz goat cheese chopped shopping list
How to make it
- Boil noodles in heavily salted water until al dente.
- While noodles boil -
- Melt butter and heat oil in skillet until hot.
- Add garlic and saute for 1-2 minutes but do not brown
- Add shrimp and saute slightly until
- Add artichoke hearts and tomato slices and saute for 1-2 minutes
- Add wine and simmer 5 minutes
- Add parsley and simmer until noodles are done.
- Add noodles to pan and toss, adding pasta water as necessary.
- Toss in goat cheese and remove from heat.
- Add to serving bowl and enjoy!
