Tofu Peanut Butter Oatmeal Cookies

- 1 12 1/3 ounce package of silken tofu (firm) shopping list
- 1/3 cup natural peanut butter shopping list
- 1 cup brown sugar, lightly packed shopping list
- 1 tsp vanilla extract shopping list
- 1 cup all purpose flour shopping list
- 1 tsp baking powder shopping list
- 1 1/2 cups regular oats shopping list
- 1/4 cup vegan chocolate chips (optional) shopping list
How to make it
- Preheat oven to 350F
- In a large bowl, cream the tofu, peanut butter, brown sugar & vanilla
- Add the flour, baking powder and oats to the mixture
- Stir thoroughly till well combined
- Stir in chocolate chips if you desire a richer tasting cookie (alternatively, you can bake the cookies plain, then ice the baked cookies with some melted chocolate chips)
- Drop spoonfuls onto a greased cookie sheet, at least an inch apart
- Bake for 20-25 minutes (till golden brown)
- Yields approximately 30 cookies

This is a great recipe, even as a non-vegan I love the way you replaced butter and eggs with tofu! it is a great base for experimenting as well.
