Ingredients
  • 1 12 1/3 ounce package of silken tofu (firm)
  • 1/3 cup natural peanut butter
  • 1 cup brown sugar, lightly packed
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1 1/2 cups regular oats
  • 1/4 cup vegan chocolate chips (optional)

Directions
  1. Preheat oven to 350F
  2. In a large bowl, cream the tofu, peanut butter, brown sugar & vanilla
  3. Add the flour, baking powder and oats to the mixture
  4. Stir thoroughly till well combined
  5. Stir in chocolate chips if you desire a richer tasting cookie (alternatively, you can bake the cookies plain, then ice the baked cookies with some melted chocolate chips)
  6. Drop spoonfuls onto a greased cookie sheet, at least an inch apart
  7. Bake for 20-25 minutes (till golden brown)
  8. Yields approximately 30 cookies

This is a great recipe, even as a non-vegan I love the way you replaced butter and eggs with tofu! it is a great base for experimenting as well.


Are these crispy? or soft...i like my cookies crispy..not how applesauce makes them soft muffin-like..please let me know asap b.c i would love to make soon once you tell me if they are crispy..thanks a bunch.
