Cajun Honey Pork Loin Recipe
An easy flavorful pork dish serve with a red pepper cream sauce. I accompany this with roasted red potatoes

Ingredients
  • Pork tenderloin
  • 1/4 cup of honey
  • 2 tsp of salt
  • 2 tsp of black pepper
  • 2 tsp of granulated garlic
  • 1/4 cup of cajun seasoning
  • 1 tsp. olive oil
  • 2 tsp of butter
  • 2 tsp. of fresh minced garlic
  • 1/4 cup of white wine
  • 2 pints of heavy whipping cream
  • 1 jar of roasted red peppers (drained)

Directions
  1. Mix together cajun seasoning with salt pepper and garlic
  2. Dry rub cajun mixture on pork loin
  3. Pour honey over pork loin and rub on seasoned pork loin
  4. Let stand in fridge overnight.
  5. Heat oil in skillet sear all sides of pork loin till approx 2-3 minutes per side
  6. Place on baking sheet and finish in preheated oven at 350 degrees till pork loin is 150 degrees in thickest part of pork, let pork loin rest for at least 5 minutes before slicing.
  7. Sauce
  8. Heat butter in pan add fresh garlic till light brown
  9. Pour in wine and reduce by half
  10. Pour in heavy whipping cream and let reduce till it starts to thicken and is reduced down.
  11. Puree roasted red peppers add to reduced cream mixture.
  12. Slice pork loin and serve with red pepper cream sauce.
