Almost A Meal In A Muffin

- 1 cup whole wheat flour shopping list
- 1 cup unbleached white flour shopping list
- 1 teaspoon cinnamon (can add other spices, allspice, ginger, etc) shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 2 ripe bananas shopping list
- 3 tablespoons blackstrap molasses shopping list
- 1/2 cup apple juice, (a little more if needed) shopping list
- 2 teaspoons apple cider vinegar shopping list
- 1 zucchini*, finely grated (about 1-1/2 cups, squeeze water out) shopping list
- 1/2 cup finely chopped or ground nuts (walnuts, pecans) shopping list
- 1/2 cup raisins, (or cranberries, or chopped prunes) shopping list
- * May use grated apple shopping list
How to make it
- In large mixing bowl, combine flours, cinnamon, baking powder, baking soda
- Whisk all together
- In blender or food processor, place peeled bananas, blackstrap molasses, apple juice, apple cider vinegar
- Blend until smooth
- Add these wet ingredients to dry ingredients
- Mix lightly, and gently by hand
- Fold in zucchini, walnuts, raisins (or cranberries, or prunes)
- (Use more apple juice if needed to moisten all flour)
- Divide mixture into 12 lined muffin tins
- Bake 375 degrees for about 20 minutes, or until top springs back
- Remove muffins
- Cool on wire rack.
- Store in airtight container or may freeze
