How to make it

  • In large mixing bowl, combine flours, cinnamon, baking powder, baking soda
  • Whisk all together
  • In blender or food processor, place peeled bananas, blackstrap molasses, apple juice, apple cider vinegar
  • Blend until smooth
  • Add these wet ingredients to dry ingredients
  • Mix lightly, and gently by hand
  • Fold in zucchini, walnuts, raisins (or cranberries, or prunes)
  • (Use more apple juice if needed to moisten all flour)
  • Divide mixture into 12 lined muffin tins
  • Bake 375 degrees for about 20 minutes, or until top springs back
  • Remove muffins
  • Cool on wire rack.
  • Store in airtight container or may freeze
