Yam Pla Muek Spicy Squid Salad

- 1 lb fresh squids. shopping list
- 1 tbsp fresh ginger root, julienne. shopping list
- 1 tbsp lemongrass, thinly sliced shopping list
- 2 tbsp onion, chopped. shopping list
- 3 tbsp lime juice. shopping list
- 3 tbsp fish sauce. shopping list
- 1 tbsp scallions, chopped. shopping list
- 1 tbsp cilantro, chopped. shopping list
- 1/2 cup mint leaves. shopping list
- 2 fresh crushed hot chili peppers. shopping list
How to make it
- Clean and wash the fresh squids, removing all inner matters and skin. Cut through into rings about 3/4 inch wide.
- In a pot add water and bring to boil, add squid and cook it about 2-3 mintues (don't over cook the squid) and drained. Place the well drained squid meat into a bowl and add fish sauce and lime juice. Adjust tastes by adding more of either ingredients. The tastes should be tangy sour with sufficient salty tastes.
- Add lemongrass, ginger roots, chopped scallions, cilantro, mint leaves, and crushed hot chilli peppers. Mix well together and arrange on serving plate...best serve with sticky rice..or by itself
