- INGREDIENTS: shopping list
- 3 T. extra virgin olive oil shopping list
- 4 to 6 cloves garlic, minced shopping list
- 1 medium to large onion, diced shopping list
- 1-15 oz. can diced tomatoes shopping list
- 1-28 oz. can crushed tomatoes shopping list
- salt and pepper shopping list
- 1 qt. chicken stock shopping list
- 4 cups torn stale bread shopping list
- 2-15 oz. cans cannelini beans, drained and rinsed shopping list
- parmegiano reggiano shopping list
- chiffonade of fresh basil. shopping list
How to make it
- DIRECTIONS:
- Heat a large soup pot over medium heat.
- Add olive oil and ¾ of the onion. Saute until clear and add garlic and continue cooking for 3-4 more minutes.
- Add tomatoes. Add stock and raise heat to bubbling.
- Add salt and pepper to taste.
- Reduce heat to simmer and add bread and beans.
- Simmer until soup thickens.
- Adjust seasonings and bowl.
- Top with cheese, spoonful of onions and fresh basil. Serve.
