How to make it

  • DIRECTIONS:
  • Heat a large soup pot over medium heat.
  • Add olive oil and ¾ of the onion. Saute until clear and add garlic and continue cooking for 3-4 more minutes.
  • Add tomatoes. Add stock and raise heat to bubbling.
  • Add salt and pepper to taste.
  • Reduce heat to simmer and add bread and beans.
  • Simmer until soup thickens.
  • Adjust seasonings and bowl.
  • Top with cheese, spoonful of onions and fresh basil. Serve.

    Good Idea to combine two Tuscan classics: Pappa al pomodoro and zuppa di fagioli. I hope you know, though, that 'Papa al pomodoro' translate into, er , 'Pope in a tomato sauce'.
