Mexican Corn Soup

- 4 cups fresh or frozen corn kernals shopping list
- 1/4 cup chopped onion shopping list
- 2 tbsp butter shopping list
- 2 tbsp flour shopping list
- salt and pepper to taste shopping list
- 2 cups of chicken broth shopping list
- 2 cups milk or cream(I use cream) shopping list
- 1 cup grated cheddar cheese shopping list
- 1 can (4 oz.) green chilies, chopped shopping list
- tortilla chips shopping list
- 1/2 cup crisp bacon , crumbled shopping list
How to make it
- Saute corn and onion in butter until tender.
- Add flour, salt and pepper, cook 1 min.
- Gradually add broth, alternating with milk or cream until thickened.
- Add cheddar cheese and green chilies. Do not over heat.
- Serve soup in individual bowls, stirring in 4 or 5 tortilla chips.
- Garnish with crumbled bacon.
- You can put sour cream on top and I like salsa too.

This was delicious! I opted to use the heavy cream which gave it the perfect creaminess and richness. I love the flavor of the green chilies as well ;0) Thanks Michelle!
