Sea Scallops with Shrimp Butter

- 6 medium shrimp, cooked, peeled and deveined shopping list
- 1/4 teaspoon Old Bay Seasoning shopping list
- 1/4 teaspoon paprika shopping list
- 1 clove garlic, minced shopping list
- 1 stick unsalted butter shopping list
- 24 large sea scallops shopping list
- 1/4 cup all-purpose flour shopping list
- 1 tablespoon butter shopping list
- 1/4 cup white wine shopping list
- 24 snow pea pods, cut in half lengthwise shopping list
- 1 red bell pepper, julienned shopping list
- 1 yellow bell pepper, julienned shopping list
- 1 green bell pepper, juiienned shopping list
- 1/4 cup fresh parsley, minced shopping list
- 1 bunch green onions, cut on a diagonal into 3 inch pieces shopping list
How to make it
- In food processor, combine shrimp, Old Bay seasoning, paprika, garlic and 1 stick butter. Process until smooth. Chill until ready to use.
- Dredge scallops in flour. Shake off excess flour.
- In large skillet, saute scallops in 1 tablespoon butter until browned on both sides. Remove and keep warm.
- Deglaze pan with wine and shrimp-butter mixture.
- Add snow pea pod and bell peppers to skillet. Cover and steam just until tender-crisp.
- Divide vegetables between 4 dinner plates.
- Arrange scallops on top of vegetables. Spoon any remaining pan juices over scallops.
- Sprinkle with parsley and green onions.
