  • 6 medium shrimp, cooked, peeled and deveined
  • 1/4 teaspoon Old Bay seasoning
  • 1/4 teaspoon paprika
  • 1 clove garlic, minced
  • 1 stick unsalted butter
  • 24 large sea scallops
  • 1/4 cup all-purpose flour
  • 1 tablespoon butter
  • 1/4 cup white wine
  • 24 snow pea pods, cut in half lengthwise
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 green bell pepper, juiienned
  • 1/4 cup fresh parsley, minced
  • 1 bunch green onions, cut on a diagonal into 3 inch pieces

Directions
  1. In food processor, combine shrimp, Old Bay seasoning, paprika, garlic and 1 stick butter. Process until smooth. Chill until ready to use.
  2. Dredge scallops in flour. Shake off excess flour.
  3. In large skillet, saute scallops in 1 tablespoon butter until browned on both sides. Remove and keep warm.
  4. Deglaze pan with wine and shrimp-butter mixture.
  5. Add snow pea pod and bell peppers to skillet. Cover and steam just until tender-crisp.
  6. Divide vegetables between 4 dinner plates.
  7. Arrange scallops on top of vegetables. Spoon any remaining pan juices over scallops.
  8. Sprinkle with parsley and green onions.
