Turkey Thighs With Orange Sauce For Two Recipe
A combination of two recipes I found at a turkey website with additional tweaking by me.

Ingredients
  • Two turkey thighs, skin removed
  • 1 large shallot, sliced
  • 3/4 cup orange juice
  • 2 Tbs. brown sugar
  • 2 Tbs. water
  • 1 Tbs. balsamic vinegar
  • 1 Tbs. lemon juice
  • 1-1/2 tsp. grated orange rind
  • 1 Tbs. cornstarch
  • 2 Tbs. water

Directions
  1. Preheat oven to 350F. Place turkey thighs in a two quart baking dish. Sprinkle with salt and pepper to taste. Put sliced shallots on top of thighs.
  2. In a medium saucepan, heat orange juice, brown sugar and water over medium heat, stirring until sugar is dissolved.
  3. Add balsamic vinegar, lemon juice and orange rind. Heat until boiling. Pour sauce around thighs in the dish.
  4. Cover and bake for approximately 1-1/2 hours or until turkey is tender and juices run clear. Remove turkey to serving dish. Pour the sauce into a saucepan on high heat.
  5. In a small bowl, mix cornstarch with water. Add to sauce, stirring constantly until sauce thickens and begins to bubble. Serve sauce with thighs.
