How to make it

  • boil in a wok of boiling water for 3 minutes, drain
  • bring spring water to the boil add chicken pieces,
  • add ginger, celery and leek, cover and cook for 20 minutes add salt and white pepper, cover and cook for another 20 minutes,
  • turn off the heat, don't open the lid for at least 10 minutes, serve

    my grandma and my mom uses white pepper in all their recipes, they never use black pepper. in chinese soups we use white pepper, cause the flavor is not exactly the same and the soup should be clear. but if you can't get white pepper, ofcourse you can use black pepper,

    i have ate chicken soup with my daughter at a chinese resturant before but i never knew what all was in it but it was delicious. i will be trying this one for sure.thanks for posting this one. can you use black pepper or does it have to be white pepper?
