Easy Chicken Mole

- 6 chicken thighs(21/2lbs)trimmed of excess fat shopping list
- 2tsp anchochili powder(can use regular) shopping list
- 1tsp ground cumin shopping list
- 2Tbs.canola oil shopping list
- 1/2tsp each kosher salt and fresh ground pepper,mixed shopping list
- 1/2(8.25oz.)jar prepared mole sauce shopping list
- 2c. water shopping list
- 1/2c grated Cotija cheese or crumbled feta cheese shopping list
- chopped cilantro,for garnish shopping list
How to make it
- Heat oven to 400. Have ready a shallow baking dish large enough to accomodate chicken in a seperate layer.
- Combine chili powder and cumin in a small cup;rub all over the chicken. Heat oil in a large skillet over med-high heat;add chicken,skin side down. Cook 5 mins or until skin is nicely browned;turn chicken. Cook 2nd side 2 mins,until no lnger pink on the surface. Remove skillet from heat. Sprinkle chicken with salt mixture
- Mix mole sauce and water in smalll saucepan and bring to a boil,whisking till smooth. Pour onto bottom of baking dish. Place chicken skin side up on top of sauce.Sprinkle with cheese. Bake 22 to 26 mins.,until chicken is fully cooked. Garnish with chopped cilantro.
