How to make it

  • Heat oven to 400. Have ready a shallow baking dish large enough to accomodate chicken in a seperate layer.
  • Combine chili powder and cumin in a small cup;rub all over the chicken. Heat oil in a large skillet over med-high heat;add chicken,skin side down. Cook 5 mins or until skin is nicely browned;turn chicken. Cook 2nd side 2 mins,until no lnger pink on the surface. Remove skillet from heat. Sprinkle chicken with salt mixture
  • Mix mole sauce and water in smalll saucepan and bring to a boil,whisking till smooth. Pour onto bottom of baking dish. Place chicken skin side up on top of sauce.Sprinkle with cheese. Bake 22 to 26 mins.,until chicken is fully cooked. Garnish with chopped cilantro.

    I love this... and it looks like the one my friend makes.. she does not use oven though.. I like that as it gives me time to clean up... Love my mole!

    There are a few unfamiliar things here to me in ingrediants. i.e. mole, cotija chesse and is the anchochile at the store too? What color is it?
