Dawnas Mexican Meatloaf

I made this up the other night and was the best Mexican meatloaf I have ever made! SO good. I didn't really measure anything, so I'll dothe best i can here for you! Ingredients
- 2 lbs ground beef shopping list
- 1 small onion, chopped shopping list
- 1/2 cup refried beans shopping list
- 1-2 eggs shopping list
- 3/4 cup coarsely crushed tortilla or corn chips shopping list
- 1/2 cup shredded cheddar cheese shopping list
- 1/2 to 1 package taco seasoning shopping list
- salt, pepper and garlic powder to taste shopping list
- 2/3 cup salsa shopping list
- 1/2 cup shredded cheddar (another) shopping list
- 1/2 cup coarsely crushed tortilla or corn chips (another) shopping list
How to make it
- Mix first 8 ingredients well. Shape into loaf and put into baking dish. Spread salsa over top of loaf. Put into oven preheated to 350 degrees and bake for one hour. Put remaining chips and cheese on top of loaf and continue baking for 30 minutes. This meatloaf has a very bold Mexican flavor and is Very tasty! I ate it with sour cream. Yum! Enjoy!
