Dawnas Mexican Meatloaf Recipe

	Bozwa / All my dishes 1 year, 10 months ago I made this up the other night and was the best Mexican meatloaf I have ever made! SO good. Ingredients

2 lbs ground beef

1 small onion, chopped

1/2 cup refried beans

1-2 eggs

3/4 cup coarsely crushed tortilla or corn chips

1/2 cup shredded cheddar cheese

1/2 to 1 package taco seasoning

Salt, pepper and garlic powder to taste

2/3 cup salsa

1/2 cup shredded cheddar (another)

1/2 cup coarsely crushed tortilla or corn chips (another)

Directions

Mix first 8 ingredients well. Shape into loaf and put into baking dish. Spread salsa over top of loaf. Put into oven preheated to 350 degrees and bake for one hour. Put remaining chips and cheese on top of loaf and continue baking for 30 minutes. This meatloaf has a very bold Mexican flavor and is Very tasty! I ate it with sour cream. Yum! Enjoy!
