  • 1# boneless,skinless chicken breasts,cut in 1/2" cubes
  • 1 cup finely minced onions
  • 2 Tbs. soy sauce
  • 1 tsp. lemon juice
  • 2 Tbs. olive oil
  • 1 tsp. dried basil
  • 3/4 tsp. ground ginger
  • 1 tsp. ground cumin
  • 1/2 tsp. black pepper
  • 1 cup of fresh spinach, cut into thin strips

  • vanilla apricot sauce;
  • 1/2 cup apricot jam
  • 1 Tbs. orange juice
  • 1 tsp. vanilla extract
  • 1/4 tsp. ground ginger
  • 1/8 tsp. pumpkin pie spice

Directions
  1. combine chicken,onion,soy saucelemon juice,olive oil and spices in a bowl,mix well and refrigerate, covered, for 15 minutes
  2. heat a large skillet over medium-high heat.
  3. add chicken mixture and marinade and cook 7-10 minutes, or until chicken in done
  4. drain liquid from pan
  5. serve over rice

  8. to prepare sauce; combine all ingredients in a small microwavable bowl and cook for 25 seconds(until sauce is warm)
  9. serve on the side or over the chicken
