Crunchy Cucumbers And Onions

- 1 large cucumber peeled and sliced thinly shopping list
- 1 red onion thinly sliced shopping list
- 1/4 cup white vinegar shopping list
- 1/2 cup plain salad oil shopping list
- 1 heaping tablespoon granulated sugar shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Soak peeled and sliced cucumbers in a salt water solution in refrigerator for 2 hours.
- While this is soaking prepare oil and vinegar mixture altering oil to vinegar ratio to taste.
- To make mixture first dissolve sugar in vinegar then mix in oil.
- Start with the ratio of approximately 1/2 cup oil to 1/4 cup vinegar.
- Mix the thinly sliced onion into this liquid coating well then refrigerate.
- Drain cucumbers and rinse slightly.
- When fully drained of excess water mix with the onions and liquid mixture.
- Add pepper then refrigerate for 30 minutes before serving.
