Curried Peanut Shrimp With Pasta Recipe

Ingredients
  • 8 ounces fettuccine
  • 2/3 cup chicken or my vegetable stock;))
  • 1/2 cup creamy peanut butter
  • 2 tbs balsamic vinegar
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 piece ginger root THINLY sliced
  • 1 tbs olive oil
  • 1/1/2 cups sliced green onions(I use everything but the roots)
  • 2 tsp curry powder(if you love curry taste use 3
  • 11/2 tsp minced garlic(try to use fresh it makes a difference)
  • 11/2 lbs large raw peeled deveined shrimp
  • 2 tbs chopped fresh cilantro

Directions
  1. prepare pasta
  2. While pasta cooks place next 5 ingredients(broth through ginger root) in a blender or food processor until smooth
  3. Heat oil in large nonstick skillet over medium heat
  4. Add onions, curry, garlic saute 3 minutes
  5. Add shrimp cook 6 minutes or until shrimp is done.
  6. Stir in peanut sauce cook for 1 minute
  7. Serve over pasta, sprinkle with cilantro
  8. Variation: 1/3 cup bean sprouts on top of pasta before sauce
  9. Crushed peanuts on top
  10. Serve with limes and/or chile garlic sauce sold in asian markets
  11. Enjoy!
