Curried Peanut Shrimp with pasta

- 8 ounces fettuccine shopping list
- 2/3 cup chicken or my vegetable stock;)) shopping list
- 1/2 cup creamy peanut butter shopping list
- 2 tbs balsamic vinegar shopping list
- 1/2 tsp salt shopping list
- 1/8 tsp pepper shopping list
- 1 piece ginger root THINLY sliced shopping list
- 1 tbs olive oil shopping list
- 1/1/2 cups sliced green onions(I use everything but the roots) shopping list
- 2 tsp curry powder(if you love curry taste use 3 shopping list
- 11/2 tsp minced garlic(try to use fresh it makes a difference) shopping list
- 11/2 lbs large raw peeled deveined shrimp shopping list
- 2 tbs chopped fresh cilantro shopping list
How to make it
- prepare pasta
- While pasta cooks place next 5 ingredients(broth through ginger root) in a blender or food processor until smooth
- Heat oil in large nonstick skillet over medium heat
- Add onions, curry, garlic saute 3 minutes
- Add shrimp cook 6 minutes or until shrimp is done.
- Stir in peanut sauce cook for 1 minute
- Serve over pasta, sprinkle with cilantro
- Variation: 1/3 cup bean sprouts on top of pasta before sauce
- Crushed peanuts on top
- Serve with limes and/or chile garlic sauce sold in asian markets
- Enjoy!
