Pepperoni Seitan

- 1 1/2 cups vital wheat gluten shopping list
- 1 tsp salt shopping list
- 1 tbsp hot smoked paprika shopping list
- 1 tsp freshly ground pepper shopping list
- 1 tsp crushed red pepper flakes shopping list
- 1 tsp mustard seeds (I used black, because that's what I had) shopping list
- 1 tsp fennel seeds shopping list
- 2 large cloves garlic, minced shopping list
- 3/4 cup cold water shopping list
- 4 tbsp tomato paste shopping list
- 1 tbsp soy sauce or tamari shopping list
- 2 tbsp tahini (or peanut butter) shopping list
- 2 tbsp bbq sauce shopping list
How to make it
- Preheat the oven to 325 F.
- Combine the dry ingredients in a large bowl.
- Mix the wet ingredients in a smaller bowl.
- Add the wet ingredients to the dry, and knead for five minutes.
- Shape the dough into a sausage-like log, and wrap completely in foil.
- Twist the foil at the ends. The foil should be snug, but not skin-tight around the seitan, as it will expand during baking.
- Place the log directly on the oven rack and bake for approximately 75 minutes.
- When it's done, unwrap and let cool.
