Use your favorite banana bread recipe to make a unique bread pudding! (Goes well with a rum sauce.)

Ingredients
  • Your favorite banana bread, cooled and cubed
  • 3 bananas
  • 3 eggs
  • 1 teaspoon cinnamon
  • 1 cup water
  • 1 can sweetened condensed milk
  • 1/4 cup coconut
  • 2 tablespoons butter, melted
  • 2 tablespoons vanilla
  • 1/2 cup pecans, chopped

Directions
  1. Preheat oven to 350 degrees;
  2. Place banana bread cubes in a greased 9X13 baking dish;
  3. Peel and slice bananas and scatter them over the bread cubes;
  4. Beat together eggs and cinnamon; add remaining ingredients, except chopped pecans, and mix;
  5. Pour mixture evenly over bread and bananas;
  6. Sprinkle pecans on top;
  7. Bake 45 to 50 minutes or until knife comes out clean.
