How to make it

  • Preheat oven to 350. Lightly oil a 2 quart shallow baking dish.
  • Peel the carrots and shred them in a food processor - you will net about 8 cups.
  • Core and peel the apples. shred them as well. You'll net about 2 cups.
  • Coarsely chop the nuts except for a reserved 1/4 cup to top the dish with.
  • Combine all but 1/4 cup of the almonds in a large bowl.
  • Transfet the mix to the prepared dish.
  • Sprinkle the reserved nuts on top and bake about 25 minutes, until the top just starts to brown.
