Has Christmas ended? Not for us because we still haven't celebrated with one of our daughters - "Peanut" and her hubby. That is my explanation for continuing with these scrumptious desserts ;-)

Ingredients
  • 3/4 cup butter or margarine, softened
  • 1 cup sugar, divided
  • 1 teaspoon vanilla, divided
  • 1-1/2 cups flour
  • 2 (8 ounce) packages cream cheese, softened
  • 2 eggs
  • 1/2 cup almond brickle chips
  • 3 Tablespoons caramel ice cream topping

Directions
  1. Mix butter, 1/2 cup of the sugar and 1/2 tsp. of the vanilla with electric mixer on medium speed until light and fluffy.
  2. Gradually add flour, mixing on low speed until blended.
  3. Press onto bottom of 13 x 9 inch baking pan.
  4. Bake at 350 degrees for 20 to 23 minutes or until lightly browned.
  5. Mix cream cheese, remaining 1/2 cup sugar and 1/2 tsp. vanilla with electric mixer on medium speed until well blended.
  6. Add eggs and mix well.
  7. Blend in chips.
  8. Pour over crust.
  9. Dot top of cream cheese mixture with topping.
  10. Cut through batter with knife several times for marble effect.
  11. Bake at 350 degrees F for 30 minutes.
  12. Cool in pan on wire rack.
  13. Refrigerate.
  14. Cut into bars.
  15. Makes 24 bars (24 servings)

Lor, these sound fantastic - so glad I stumbled upon this...I haven't been able to browse recipes much the past couple of months, so I feel like I have tons and tons (like these) to catch up on!
