Ingredients

6 lbs boneless pork ribs

Dry rub:

1/2 cup packed dark brown sugar

2 tbs chili powder

1 tbs paprika

1 tbs fresh ground black pepper

2 tbs garlic powder

2 tsp onion powder

2 tsp kosher salt

2 tsp ground cumin

1 tsp ground cinnamon

1 tsp jalapeno seasoning salt (optional)

1 tsp cayenne peper

Mop sauce:

1 cup apple cider

3/4 cup apple cider vinegar

1 tbs onion powder

1 tbs garlic powder

2 tbs lemon juice

1 jalapeno pepper, finely chopped note: freeze pepper first to reduce oils soaking into skin. (optional)

3 tbs hot pepper sauce

salt and pepper to taste

3 tbs liquid smoke ( if using your oven)

Directions

In a medium bowl, mix together ingredients for the dry rub. Rub generously onto ribs. Cover and refrigerate fro at least 4 hours, best if left over night.

Prepare Barbecue grill. While grill heats up, prepare the mop sauce. In a medium bowl mix ingredients together.

When coals are grey and ashed over, place 2 handfuls of soaked woodchips directly on them. Place ribs on grill plate. Cover and cook until done to taste. Baste with mop sauce regularly. Throw handfuls of soaked woodchips onto coals every hour. Keep grill from going below 225 degrees F. Discard any left over mop sauce.
