How to make it

  • In a medium bowl, mix together ingredients for the dry rub. Rub generously onto ribs. Cover and refrigerate fro at least 4 hours, best if left over night.
  • Prepare Barbecue grill. While grill heats up, prepare the mop sauce. In a medium bowl mix ingredients together.
  • When coals are grey and ashed over, place 2 handfuls of soaked woodchips directly on them. Place ribs on grill plate. Cover and cook until done to taste. Baste with mop sauce regularly. Throw handfuls of soaked woodchips onto coals every hour. Keep grill from going below 225 degrees F. Discard any left over mop sauce.
