Ingredients
  • 3 cups allpurpose flour
  • 2 cups sugar
  • 1t baking soda
  • 1t salt
  • 1t cinamon
  • 1 cup oil
  • 1 1/2 t vanilla
  • 1 cup crushed pineapple w/juice
  • 1 cup chopped pecans
  • 2 cups chopped bananas
  • 3 beaten eggs

Directions
  1. combine (sift together) dry ingredients
  2. add eggs and oil
  3. stir till all dry ingredients are moistened
  4. do not beat
  5. stir in vanilla ,pineapple,peacans and bananas
  6. spoon batter into 3 greased and floured pans
  7. (either 8 or 9 inch pans)
  8. bake@350 25-30min
  9. cool in pans 10 min then remove to wire rack to cool
  10. Frosting
  11. 8oz cream cheese (room temperture )
  12. 1/2 cup butter softened (same as 1 stick butter )
  13. 16oz powered sugar sifted
  14. 1t vanilla extract
  15. (if you use 9"inch pans you will need more frosting to completely cover the cake . consider letting the sides show as necessary
