Whole Wheat Banana-pecan Muffins

- 1 1/2 cups wheat bran shopping list
- 1 cup non fat milk shopping list
- 1/2 cup unsweetened applesauce shopping list
- 1 egg shopping list
- 1/4 cup of honey shopping list
- 1/2 tsp vanilla extract shopping list
- 1 cup whole wheat flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1 sliced banana* shopping list
- 1/4 cup chopped pecans (or any nuts you like)* shopping list
- *substitute 1 cup of thawed or fresh blueberries instead of banana/nuts to switch it up!* shopping list
How to make it
- Preheat oven to 375F (190 C)
- Spray muffin pan with non-stick spray. (muffin liners are NOT recommended. Half of the muffin gets stuck to the paper)
- Mix together wheat bran and milk and let stand for 10 minutes.
- In a large bowl, mix together applesauce, egg, honey and vanilla.
- Beat in bran mixture.
- Sift together flour, baking soda, baking powder and salt.
- Stir into bran mixture until just blended.
- Fold in bananas and nuts.
- Scoop into muffin tin.
- Bake in preheated oven for 15-20 minutes or until tops spring back when touched.
