Sausage And Bean Soup

- 1 tablespoon olive oil shopping list
- 1 tablespoon butter shopping list
- 2 lbs smoked sausage, sliced or diced shopping list
- 1 medium onion, diced shopping list
- 2 cloves garlic, minced shopping list
- 2 carrots, diced shopping list
- 1 bell pepper, diced shopping list
- 2 ribs celery, diced shopping list
- 1 tablespoon chopped parsley shopping list
- 3 cans prepared chicken broth shopping list
- 1 can lima beans, drained and rinsed shopping list
- 1 can navy beans, drained and rinsed shopping list
- 1 can red kidney beans, drained and rinsed shopping list
- salt and black pepper to taste shopping list
How to make it
- Heat the olive oil and butter in a large Dutch oven over medium-low heat.
- Add sausage too pot and cook until sausage reaches temperature and begins to sizzle.
- Add parsley, carrots, bell pepper, celery, onion and garlic.
- Season the pot with salt and black pepper.
- Sauté until the veggies are tender.
- Add chicken broth. Increase heat to medium high and bring to a boil.
- Add beans, reduce heat to low, cover, and simmer for 20-30 minutes.
- Re-season with salt and black pepper as necessary. Serve with cornbread or garlic toast.

Love them beans and the sausage! Another great soup recipe from you. Will certainly try this even though *our* weather has greatly improved the last few days. As far as I'm concerned any day is a great day for soup. Great post!
